In Asia, rice is an important staple food and is therefore used in almost all dishes. In our latitudes, the various curries are particularly popular. The rice side dishes are hardly seasoned as they serve as a counterbalance to the tasty stews. But your rice can use a bit of spice in local dishes.

Grandmother’s spiced rice

This recipe is ideal as a side dish for a wide variety of vegetable and meat dishes of your choice and is also quick and easy to prepare. You need the following ingredients:

  • a cup of long-grain parboiled rice
  • two cups of lukewarm water
  • a pinch of salt
  • half an onion peppered with cloves

Bring all the ingredients to a boil and then let the rice simmer covered for about 25 minutes. When the rice is ready, remove the onion with the cloves. And your new favorite rice dish is ready!

The perfect amount of water

Water plays an important role in rice preparation. If you get the wrong amount, the rice won’t get the consistency you want. It is then either too sticky or too grainy. Do not treat all types of rice the same, as each type requires a different amount of water. Brown rice takes about 2.5 cups of water per cup of rice. Because brown rice, unlike parboiled, is not pre-cooked, it has to simmer for up to 45 minutes. Otherwise, the core is hard and the shell is soft.

For basmati or jasmine rice, you should use around 1.5 cups of water per cup of rice to make white rice. Let the rice cook for 10 minutes and then steep for 10 minutes – this is how the rice tastes like an Asian.

Stir, stir, risotto:

Risotto is a rice dish that needs a lot of attention to make white rice. If you devote yourself fully to stirring, your risotto will get a creamy consistency and all ingredients are well combined.

For our basic recipe you need:

  • Risotto rice
  • Onion or shallots
  • olive oil
  • butter
  • White wine
  • Fond or soup
  • Parmesan

Sweat the finely chopped onions or shallots in olive oil on low heat until they are translucent to make white rice. Add risotto as needed and top off with white wine. Then let the white wine reduce completely and pour the stock or soup on – up to a maximum of half a centimeter above the rice. Let the risotto simmer for about 15 minutes. Stir constantly and pour in liquid again and again until the rice is soft and still has a grainy consistency to make white rice. Finally, you can season the risotto with butter flakes and parmesan.

This basic recipe is suitable for a wide variety of seasonal risottos. Spinach leaves, mushrooms, asparagus, and pumpkin go particularly well to make white rice. You should definitely prepare the selected ingredients so that you can then concentrate on stirring regularly. It is best to sweat the vegetables in a little butter or olive oil to make white rice, season with salt and pepper and set aside. Finally, stir the vegetables into the finished risotto.

Rice pudding: the sweet version

If you prefer milk to water, try our rice pudding recipe to make white rice. Your children in particular will enjoy this simple and tasty rice dish.

For this you need:

  • 2 servings of milk
  • 1 serving of rice
  • salt
  • sugar
  • Lemon peel
  • cinnamon
  • vanilla
  • Butter flakes

Boil two servings of milk with a little salt, grated lemon peel, and a little sugar to make white rice. Add a portion of rice to the boiling milk and let it simmer over low heat for about 10 minutes to make white rice. Keep stirring to prevent the rice pudding from sticking. After that, you should let it steep for 10 minutes to make white rice. When serving, you can refine the rice pudding with butter flakes and cinnamon or vanilla, depending on your taste. For the vegan variant, just use coconut milk. Replace the lemon peel with lemongrass (about a stick for half a liter of coconut milk) to make white rice.
